Blackened Old Bay Salmon


Blackened Old Bay Salmon Ingredients

Two 10 ounce salmon filets

1 teaspoon of salt

1 teaspoon of pepper

1 table spoon of Blackened Old Bay seasoning

Directions

Lay fresh salmon filets on a cutting board. Mix salt, pepper and blackened Old Bay seasoning together and evenly the coat the salmon. Pre heat the oven to 350 degrees.

In a medium or large pan, add 1 tablespoon of olive oil set the burner to medium high heat. Allow for the oil to heat up just prior to smoking. Place the salmon skin side down and sear for 3 minutes, flip and allow to sear for 3 minutes as well. Flip the salmon again and place 1 teaspoon of butter on each filet (this is on the meat side). Slide the pan into the preheated oven (ensure the pan is oven safe or transfer to a sheet pan) and allow to cook for 6 minutes to finish off the interior of the salmon.

Remove salmon from the pan and let rest for 3 minutes. Move to plate and serve!

Pair this salmon with a cauliflower risotto medley and some roasted asparagus or seasoned lima beans.
